Hi -

Flying is really the best option. Note Porter Air has three flights per day , one leaving as late as 8:25PM from Toronto. They have service from Toronto Island Airport (YTZ), which is in the city. You need about 45 minutes to transfer from Pearson. 

Alternatively if you find splitting travel with an overnight layover is necessary, you might look at flying to Montreal Dorval (YUL) from Toronto Pearson (YYZ) and next day catching the train from there is interesting. Unfortunately the first train departs Montreal about 7AM arriving only by 10:30, and it starts at Central Station not Dorval.

I would highly recommend flight, since Toronto-Quebec city is pretty 
long: ~ 9 hours driving. By train, it will be similar time or more.

You could try to fly to Montreal and then make a flight connection from 
Montreal to Quebec city.

Or go through another hub. Quebec city is served by many airlines from
