The center position doesn’t seem to be “off” but rather some sort of “go
back to central control and ignore this knob”, because my system cycles
(usually heat) even with the switch in the center position (it was in this
position when I came into the room).

FWIW, the shower has an actual temperature calibration, but that does’t
seem to have any more accurate bearing to the temperature of the water
than the uncalibrated hot/cold knob has on the temperature of the air in
the room, so at least we have some consistency :-)
