Another random scheduling idea: Schedule the plenaries during the lunch slot, since processing sandwiches and slides in parallel is known to work. To make this more efficient and to have the right number of vegetarian/turkey/... options at hand, pre-sell lunch tickets during registration, similar to the social event tickets.
