Jackie, 

You may change to the Czech Crown in very few banks in China. So one way is changing RMB to Euro and then change to Czech Crown in the Prague Airport (usually the exchange rate is reasonable).
Another way is bringing a debit card with VISA support to Prague and withdrawing money in Czech Crown in ATMs (usually with 15 RMB's withdrawing fee/ charged by the bank issuing the card).

The host created a nice web site (linked to on the IETF site) at http://www.ietf93.cz

It includes info on the currency, which is the Czech crown (Kč).  Lots of other useful info on Prague as well.
