There is always exactly one sub-protocol, the only difference is that
you can identify the sub-protocol if you want to. If you intermix foo
and bar then the definition of how they are mixed is the sub-protocol
and "foo" and "bar" handling occurs on a layer below it. Sub-protocols
are things you can write a reliable Wireshark dissector for. You can
write one for "foo", but you cannot write one for "foo and bar mixed
in some unidentified application-specific manner".
