Fully agree. I also happen to care about IETF meetings because I watch
these, even though I never go anymore.

YouTube is great for a lot of us. But, even aside from their new login
requirements, it does not work in some countries.

I wouldn't want to remove it on principle, since it is usually the best
online video app on any platform if it's available. I use it on Ubuntu,
Android, iOS, macOS, Apple TV, and occasionally on hotel TVs where they let
you sign in now. So, for me, these other ideas would be in addition to it.

Yes, and it sounds like they're already making sure that is the case.

BitTorrent seems like a great approach to me, so that we don't get into the
video hosting business at great expense, and these are not centrally
controlled once seeded (which the IETF should do).

I got a 6GB .iso Linux distribution in about 5 minutes from 60 peers. But
of course, I am also distributing this content now. So, the IETF needs to
make it clear that this is ok.

I am not sure about this one. Most of these are not that big. Like, I would
just download one and skip around in the Quicktime player or something.

Yeah, but this can just be web pages. Like:
"IETF 122 Plenary [YouTube | BitTorrent]"

I'm not too fussed about exactly how that would work. I'd guess we already
maintain something like this in MeetEcho or whatever generates the YouTube
playlists (I do not know how this works).
