There are certainly other demultiplexing mechanisms available, with varying degrees of technical and administrative suffering accompanying them (Ethertype, SNAP, PPP NCP, NLPID). SNAP is probably the easiest administratively (any manufacturer with an OUI can contribute a code point), and an Ethertype is probably the easiest technically (trivial, given the level of kernel hacking already necessary) and is pretty simple administratively as well.
