From my limited experience this afternoon: for the metro, you need to buy a ticket on a vending machine inside the station. Contactless payment is possible.
Then you validate this ticket before accessing the platform. There no barrier neither at entry nor at exit.
Tickets are 30CZK for 30 minute validity. 3 hours and more tickets exist.
My hotel desk is also sending tickets at the same price. YMMV.

Jonathan, do contactless payment methods work on the public transport here? E.g. can I badge in and out with Apple Pay or something like that? Or do I need to buy a ticket (and if so, one for metro and one for bus?).

There is a twice-hourly express airport bus from the main railway station, which can be reached conveniently from the vicinity of the Hilton by the C metro line.  There are also alternative bus connections with stations on the A (at Veleslavin) and B (at Zlicin) metro lines.

Prague generally has good public transport, so there's unlikely to be major traffic jams on the express bus route.  The non-express buses would also avoid any city-centre traffic, since going halfway on the metro bypasses that.

But in any case, the journey time to the airport (including walking time and connections) will not be much less than an hour.  Considering checkin queues, security, and other contingencies, I think leaving the hotel 3 hours before published departure time is entirely sensible - unless you do something particularly time-optimal like calling a taxi.  Also be sure to check which terminal you need to go from, since they are fairly widely separated on the airport grounds, so will have different bus stops.
