AB, My understanding is that Unknown is a default status, given to documents that don’t fall into any of the other categories. You can see this by clicking on the Uncategorized link <https://www.rfc-editor.org/search/rfc_search_detail.php?sortkey=Number&sorting=DESC&page=All&pubstatus%5B%5D=Unknown> from the RFC Editor page, then clicking on Additional Criteria. Some of the documents on that list were published after the IETF came into existence. The most recent one is RFC1125, dated November 1989.
