I don't want to turn this into a long digression, but I think you really need to think about what "choice" means.   For example, I can choose to eat a lot of foods that will keep me going until the next day, and won't require me to be close to a bathroom, but that definitely won't sit will and will make me sicker and sicker as the week goes by.   And there are people whose identity is tied up with what they eat: maybe they won't eat animals for ethical reasons, or won't eat non-kosher food, or non-halal food.

I think you walk a very threadbare tightrope when you try to draw a distinction between people who would get quite violently ill, people who would get only a little bit ill, and people who could manage perfectly well if only they'd give up their pesky principles.
