Here are a couple of suggestions:

[1] Overcoming the Sorrows of the Young UDP Options
Raffaele Zullo, Tom Jones, Gorry Fairhurst, TMA, June 2020.
https://tma.ifip.org/2020/wp-content/uploads/sites/9/2020/06/tma2020-camera-paper70.pdf

[2] Datagram PLPMTUD for UDP Options, TSVWG proceedings IETF109.

[1] There were various results from Eaffaele, but I'd suggest we cite
this - it evaluates how implementations calculate the UDP checksum and
demonstrate a range of schemes that result in a range of pathologies,
and reduce the expected success for deployment, showing how an
additional checksum can overcome obstacles to deployment of UDP Options.

[2] This was one of a series of talks on exploratory work implemented in
FreeBSD using UDP Options for DPLPMTUD, 2020.

You could also see if any of the material seems relevant in
"Implementation of the Internet Checksum"
Tom Herbert, TSVWG proceedings IETF113

Best wishes,

Gorry
