In this example, I would have left out the hyphen.

"Unicode character subsets".

Personally, I tend to write "subsets of Unicode characters" instead.

FWIW, I don't think the Unicode Standard contains any usage with a 
hyphen after Unicode in over a thousand pages of text. I could be wrong, 
but I don't recall any.

believe there will be a pass for that.
