This argumentation assumes that the "default" your mom should get is the 
default that is dictated by the coffee shop owner whose wifi she connects to. 
I don't think that's a given. I don't think DHCP is a default that we must 
live with until the end of times.

Privacy? Which is better? Do53 to a server handed out over DHCP or DoH to 
another server? There's not a single answer to this, it depends on who you are 
and what you believe in.
