Possibly, but reliable delivery of notifications would potentially be an issue, for cases where the message is queued rather than being delivered as soon as it lands, or even in that case if the MUA disconnects immediately after submitting.   But my mental model of how notifications work is really thin, so if that's not an issue, then sure, notifications would work.   I would have assumed that watching the sent mailbox would be how the notification would be generated, no?
