The interview is a snap; the hard part is scheduling it.  The enrollment 
centers at airports tend to be booked many months in advance, but the ones 
at land crossings, e.g., Champlain NY if you happen to be taking a trip to 
Montreal, are pretty easy to schedule.

The enrolment centers in the US don't do the eye scans, but I think that 
once you're enrolled, you can drop by a Canadian airport center without an 
appointment and get scanned.  Once they have the scans you do not need new 
ones when you renew.
