Virtual napkins can work as well.  If we can have portable virtual 
flipcharts that someone physically at the bar can run, then those remote 
can add their sketches to the 'napkins'.

Plus then you have them and should not have to worry about waitstaff 
taking them when your attention is elsewhere!
